Tier I: Introduction to Cake Design and Decorating
In this introductory course, students learn the basics of cake design. Students will fill, frost, and cover cakes using a variety of techniques. Includes basic fondant, royal icing, and gumpaste work. Students learn classic French and Italian buttercream and royal icing recipes. Note: Students will be required to bring cakes to class sessions 2 and 4. Four three-hour sessions. Total of twelve hours of instruction. Limited to ten students. Fondant Intensive
This one-day course is designed for students who already have a background in cake design but want to improve their fondant skills. In this class, students learn the tools, tips, and techniques used by professionals to give their cakes a flawless finish. Students will practice covering both real and faux cakes with fondant, and learn ruffles, bows, flowers, and more. Light refreshments provided. Limited to ten students.
